For the Cake:
1 stick (8 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
½ cup buttermilk
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
For the Apple Pie Filling:
4 apples (Golden Delicious, Gala, Honeycrisp), peeled, cored and sliced
2 tablespoons unsalted butter
¼ cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon lemon juice
¼ teaspoon salt
1 - 2 tablespoon cornstarch
For the Whipped Cream:
1 cup heavy cream
¼ cup powdered sugar
1 teaspoon vanilla

For the Cake:
Preheat the oven to 350 degrees F.

Butter and flour an 8” round baking pan or spray with non-stick baking spray.

Cream together the butter and sugar, using a stand mixer or a hand mixer, until lightened in color.

Beat in the eggs, one at a time, add the vanilla and the buttermilk.

In a separate bowl, whisk together the flour, baking powder, baking soda and salt.

Mix the dry ingredients into the wet batter and pour into the prepared pan.

Bake for approximately 25 minutes or until a toothpick comes out clean. Cool completely and slice into 3 layers.

For the Apple Pie Filling:
Melt the butter in a large skillet over medium heat.

Add the apples, sugar, cinnamon, lemon juice and salt.

Cook for about 10 minutes, stirring occasionally, until the apples are tender.

Stir in the cornstarch and continue cooking for another minute until the mixture thickens. Remove from the heat and cool completely.

For the Whipped Cream:
Add the heavy cream, powdered sugar, vanilla and salt to the bowl of a stand mixer. You can also do this with a hand mixer.

Whip until soft peaks form but be careful not to over mix.
