Rosemary Rack of Lamb

Ingredients

  • 1 Frenched 8-rib rack of lamb, approx. 2 lbs.

  • 2 Tablespoons olive oil

  • 1 Clove garlic, peeled and minced

  • 2 Tablespoons finely chopped fresh rosemary

  • Salt and ground black pepper, to taste

Directions

    Pre-heat the oven to 450 degrees F.

    In a small bowl, combine the olive oil, minced garlic and chopped rosemary.

    Brush both sides of the lamb with the oil mixture and place on a baking sheet lined with parchment paper.

    Roast the lamb for approximately 25 minutes or until it reaches an internal temperature of 135 degrees F.

    Remove from the oven, tent with aluminum foil and let rest for 15 minutes before serving.
