Asparagus and Goat Cheese Tart

Asparagus Tart

  • 1 piece frozen puff pastry, thawed
  • 8 oz. goat cheese, softened
  • 2 tablespoons cream
  • ¼ lb. sliced prosciutto
  • ¼ lb. asparagus spears, trimmed
  • 2 tablespoons olive oil
  • Salt
  • Your favorite fresh herbs or microgreens, chopped, for garnish

  1. Pre-heat the oven to 400 degrees F.
  2. Stir together the goat cheese and cream until fully combined.
  3. On a floured surface, roll out the sheet of puff pastry to approximately 11” x 13” and transfer to a baking sheet lined with parchment paper.
  4. Using the back of a butter knife, score a 1/2” border on all four sides of the pastry but be careful not to cut all the way through. This will cause the edges to raise slightly when baking and create a nice border.
  5. Spread the goat cheese mixture onto the pastry, add the sliced prosciutto and asparagus spears.
  6. Brush with the olive oil and sprinkle with salt.
  7. Bake for 25 to 30 minutes or until the edges of the pastry are a light golden brown. Top with herbs or microgreens and serve warm.
